Pumpkin Cupcakes with Vanilla Frosting


It has been a little while since I shared a recipe post so what better way than to share this amazingly yummy Pumpkin Cupcakes with Vanilla frosting recipe.
Personally, I prefer recipes that call for very little ingredients, super easy to follow and the ones that produce deliciously yummy treats. This recipe is just that :).

For the cupcakes you will need:
  •  1 cup all-purpose flour
  •  3/4 teaspoon baking powder
  •  3/4 teaspoon baking soda
  •  3/4 teaspoon ground cinnamon
  •  1/4 teaspoon salt
  •  1/8 teaspoon ground nutmeg
  • 1 cup brown sugar
  •  2 eggs, lightly beaten
  •  2/3 cup cooked and pureed pumpkin
  •  1/3 cup vegetable oil

Optional
  •  1/3 cup golden raisins
  • 1/4 cup chopped walnuts
Method
1. Preheat oven to 180 degress celcius and line your 12 muffin pan with 12 cupcake cups; set aside.
2. In a medium bowl stir together flour, baking powder, baking soda, cinnamon, salt, and nutmeg. In a large bowl combine eggs, pumpkin, brown sugar, and vegetable oil; whisk until smooth. Add flour mixture to pumpkin mixture, one-third at a time, stirring just until combined after each addition. Stir in raisins and walnuts if using. Spoon batter into prepared cupcake cups, filling each two-thirds full.
3. Bake for 15 to 18 minutes or until a wooden toothpick inserted in the centres comes out clean. Remove pan from oven and set aside for the cupcakes to cool down for 5 minutes. Then remove the cupcakes from the pan and let them cool completely before frosting them.


For the frosting, you will need:
  • 1 & 1/2 cup icing sugar
  • 3 Tspn Butter
  • Milk 
  • 1/2 tsp Vanilla Essence
  • Pinch of Salt (Optiona)
Method
1. In a bowl put in the butter then using a hand held electric mixer or whisk; beat the butter until it's light and fluffy.
2. Add the icing sugar and continue to mix until it resembles bread crumbs.
3. Add a little pinch of salt and continue to mix. (PS: you need only a pinch, be careful not to use too much salt).
4. Add the vanilla essence and mix.
5. Then add milk to the mixture. Do it one spoon at a time and mix. Do this until you reach your desired consistency.
6. Once you reached your consistency, mix the icing on high for about a min. (This is my personal preference. It makes the icing more creamy and very nice).

When all this is done and you have your icing in the piping bag, you are ready to frost your cupcakes. This recipe is so fun to do with little ones - then again, what baking recipe isn't,right! My almost 3 year old is seriously obsessed with baking. Especially the mixing of ingredients parts. Definitely give it a try and you won't regret it.
